Sautéed veggies on GF seeded wholemeal toast





Good morning! Another well-balanced breakfast which will stabilise your blood sugar levels. It is packed with healthy fats, complex carbs, plant-based protein and lots of veggies to nourish your body while keeping your energy level constantly up and a happy mind.


What you need:

(serves 1)



2 slices of GF wholemeal bread;

2 cups of sliced mushrooms;

3/4 cup of red peppers;

3 cups of fresh spinach;

a drizzle of extra-virgin olive oil

2 teaspoons of roasted sesame seeds

2 tablespoons of tahini



Optional: half an avocado


Heat a drizzle of extra-virgin olive oil in a large saucepan over medium heat. Cook and stir mushrooms until they are lightly browned, adding also the red peppers and cook for about 3-4 minutes. Reduce heat to low and simmer until mushrooms and red peppers are tender, for about 3-4 more minutes. Add the fresh spinach and let them cook for another minute until they soften.

Toast your bread and when ready spread a tablespoon of tahini on each slice and add your sautéed vegetables on top. Sprinkle some roasted sesame seeds and enjoy!
