Goji berry oat porridge with walnuts and coconut curls
A yummy and super easy breakfast today to keep your blood sugar level low, feed your brain happy and energise your body.
What you need:
♥ Gluten-free oats (half a mug)
♥ Rice milk (a mug)
♥ Two tablespoons of goji berries
♥ A handful of walnuts
♥ One and a half tablespoon of coconut curls
♥ A tablespoon of peanut butter
Place the gluten-free oats in a saucepan and add the rice milk. Bring to the boil over medium heat. Simmer for about 5 -7 minutes, depending on the oats (jumbo or fine) you have and stir occasionally. Alternatively, you can microwave it for one minute. Your porridge is ready to be placed in a bowl. Top with the rest of all ingredients and enjoy!
