COCONUT APPLE AND WALNUT LOAF - Vegan, gluten and refined sugar free ⠀⠀⠀⠀⠀⠀⠀








Good morning, grey-rainy weather here in London calls for comfy baking! So, here is a little recipe of mine if you wish to try it. This won’t spike your blood sugar levels like other treats would do. Apples are low GL (a food’s effect on blood sugar levels) and also there is a lot of fibre and omega-3s in there 🌱

What you need:

⠀⠀⠀⠀⠀⠀⠀⠀⠀

♥ 2- 3 pink lady apples; ♥ 200g of gluten-free oats (finely grounded into flour); ♥ 50g of coconut flour ♥ 150g of walnuts; ♥ 150g of coconut sugar ♥ 3 tablespoons of chia seeds; ♥ 3 tablespoons of cinnamon powder; ♥ 50 ml of coconut oil; ♥ one teaspoon of bicarbonate of soda ♥ two teaspoons of baking powder.

Start by preheating the oven to 150C.


Start by peeling and cutting the apples in little chunks. Leave them aside for the moment. In a big bowl place all the dry ingredients followed by the wet ones leaving the milk as the last wet ingredient to add as this has to be done little by little until the mixture is sticky but still firm enough to slightly hold its shape. Add the apples and mix well.


Place the mixture into a loaf tin and bake it for about an hour in the oven at 150C. Let it cool down and now enjoy the NOM NOM 😋 🌱
